Pav Bhaji (Chowpati Style)
Pav Bhaji! Wow! The name itself reminds us all of the mouthwatering taste. Pav bhaji is a very famous fast food in the state of Maharashtra and also all over India and even abroad. It is basically a spiced mixture of many vegetables. Its a thick gravy with a buttery and buttery flavor. It is traditionally cooked on a flat griddle. However the quick version is cooked with the help of pressure cooker and pan used for tempering. There are many versions of Pav bhaji – Cheese, White, Jain, Kolhapuri, Khada, Mushroom and many more.
Pav bhaji is served in schools, colleges and work places. It is a very famous canteen dish. Also is very popular on stations, fast food joints and tourist places. It is enjoyed by kids, teens, young couples, bachelors, married couples, seniors – just name it. It is super delicious. Most of the people prefer to have it in evening. Whenever you plan a small pictic to a famous tourist place near beach or gardens especially, you imagine a nice troll in place and then visit to the food joint nearby and order Pav bhaji! Enjoying this dish amidst the evening hangout is the most common thing most of the people do. There also also many famous joints which serves only Pav bhaji and Pav bhaji pulav as their dish. The tawa pulav is induced with pav bhaji masala, so the taste and flavor kind of remain constant.
Pav bhaji masala is a unique flavor – made by mixing spices. It is also readily available in market, however one can make it at home too. This masala is also used when cooking the Pavs which are to be served with bhaji. It is tossed in the tadka of butter with flavor of masala – it enriches the taste of Pav to go along with bhaji. Serves: 4
- Capsicum: 1 Small – Diced
- Water: ¼ Cup
- Tomatoes: 5 Medium size – Chopped
- Potatoes: 2 – Boiled & Mashed
- Green Peas: ½ Cup
- Butter: 2 Tablespoon
- Oil: 1 Tablespoon
- Salt: 1 teaspoon
- Red Chilli Powder: 1 teaspoon
- Turmeric Powder: ½ teaspoon
- Pav Bhaji Masala: 2 Tablespoon
- Coriander Leaves: ¼ Cup – Chopped
- Water: ~ ½ Cup
For Tempering:
- Butter: 2 Tablespoon
- Ginger Garlic Paste: 1 teaspoon
- Onion: 1 Medium – Chopped
- Red Chilli Powder: ½ teaspoon
- Pav bhaji Masala: ½ teaspoon
- Dry Fenugreek Leaves: 1 teaspoon
- Asafoetida: ¼ teaspoon
- Coriander Leaves: 1 Tablespoon
- Lemon: 1 teaspoon
- Red Color: ⅛ teaspoon (Optional)
Sides:
- Pav Bhaji Bread: 8 to 12 Pieces
- Butter: For toasting the bread
- Onion: 1 Chopped
- Lemon: 1 – Cut into quarters
- Take a Deep Pan and add Capsicum (1 diced), add Water (¼ Cup) so as to soften the capsicum.
- Add Chopped Tomatoes (5 Chopped) and Potatoes (2 Boiled& Mashed) and mix it well
- Add Green Peas (½ Cup) mix and cook the mixture and then mash the whole thing.
- Add Butter (2 Tbsp) and Oil (1 Tbsp) stir the mixture, Close the lid and let it cook for 5 minsl
- Add Salt (1 tsp), Red Chilli Powder (1 tsp), Turmeric Powder (½ tsp) and Pav Bhaji Masala (2 Tbsp),
- Add Water (as required – approx. ½ cup) to tender the mixture & prevent sticking
- Add Coriander Leaves (¼ Cup – chopped) – Mix & Mash the preparation
- Make a well in between OR use separate pan. Add Butter (2 Tbsp) let it melt
- Add Ginger Garlic Paste (1 tsp), Onion (1 chopped), Red Chilli Powder (½ tsp), Pav Bhaji Masala (½ tsp), Dry Fenugreek Leaves (1 tsp), and Asafoetida (¼ tsp) and continue to mash the whole thing.
- Add Coriander leaves (1 Tbsp), Lemon (1 tsp), Red Color (⅛ tsp)
- Serve it along with slightly toasted buttered Pav Bhaji Bread – Take 1 tsp butter on a pan. You can directly toast Pav on butter, or can also add some masalas to it – little mix of Red chilli and Pav Bhaji masala.
- Serve along with Onion (chopped), Lemon (Cut into quarters). Enjoy the Delicious Pav Bhaji!
