Crispy Corn
Crispy corn became a very common street food recipe or snack recipe. it is a popular request for a meal starter coming from young and urban audience. These are typically fast, simple to make and, more importantly, in taste, lip-smacking. It can be made with many choices, and the crispy maize recipe, known for its crispiness and taste, is one such common and simple street food snack.
The main thing to keep in mind while making this is the crispy coating. Coating is sometimes not consistent around the corn kernels. It is mostly about the flour used as part of the coating.
I used equal quantities of maize and rice flour, making it suitable for a crispy texture. Also, even after the deep-frying process, the plain flour helps stick it to the maize. Typically, during deep frying, the key problem when making the crispy maize recipe is the non-stickiness of the coating of the kernels. But this recipe post should fix the problem perfectly.
In addition, I would like to highlight some of the crispy corn recipe tips, ideas and variations. First of all, I used frozen sweet corn kernels in this recipe that are already thawed. You will have to de-seed it first and then boil it in water if you like to use fresh sweet corn kernels. Secondly, with baby maize or tender corn shoots, you may follow the same step and procedure. You may use them as they are.

How to make crispy corn in the BBQ style?
Throw a little flour into the cooked sweetcorn and fry until crispy. Then toss it and some freshly chopped onions, chillies and cilantro leaves along with some lemon juice in the peri per masala mix. It’s that easy.
CRISPY CORN TIPS:
- I used sweetcorn that was frozen. You may also use fresh sweet corn.
- Frozen is best because no cooking is required, just good thawing or just 1 min microwave.
- Before adding flour, rinse the maize well so that it doesn’t get lumpy.
- Gently throw the corn into the flour so that it coats in a thin layer.
- Shake the excess flour so that the oil does not get too floury.
- In very hot oil, fry the corn so it gets very crunchy.
- Just add chilli powder and chaat masala powder if you do not have peri peri seasoning.
- Instead of lemon juice, you should add vinegar.
- Serve immediately for the best taste
FEW EXTRA TIPS FOR SWEET CORN RECIPE CRISPY
- You may use a mix of Indian spices instead of adding Peri Peri seasoning.
- Chili powder, chaat masala powder, cumin powder and black pepper powder can be used in combination.
- You can only use a mixture of cornflour and rice flour to get even more crispy corn.
- If you wish, add the finely chopped capsicum.
- In order to get crispier maize, double frying maize can help. Fry the sweetcorn in hot oil for 1 min, drain and then fry again until crispy in super hot oil
Preparation Time: 10 mins
Cooking Time: 15 mins
Serves: 2
- American Corn: 1 Cup
- Water: 2 Cups
- Salt: ½ teaspoon
- Maida: 1 Tablespoon
- Corn Flour: 1 Tablespoon
- Baking Powder: ¼ teaspoon
- Black Pepper: ¼ teaspoon
- Salt: ¼ teaspoon
- Water: 1 to 2 teaspoon
- Oil: For Frying Corns
For Tempering:
- Oil: 1 Tablespoon
- Ginger: 1 teaspoon – Chopped
- Onion: 1 Small – Chopped
- Chillies: 1 tsp – Chopped
- Roasted Cumin Powder: ¼ teaspoon
- Chaat Masala: ¼ teaspoon
- Red Chilli Powder: ¼ teaspoon
- Lemon: 1 teaspoon
- Green Onion: ¼ cup – Chopped (the green leaves)
- Add Water (2 Cups) in a Pan and add Salt (½ tsp), bring it to boil.
- Add American Corn (1 Cup) and cook for about 2 to 3 mins. Let it cool down.
- To the Corn add Maida (1 Tbsp), Corn Flour (1 Tbsp), Baking Powder (¼ tsp) and Black Pepper (¼ tsp), Salt (¼ tsp). Sprinkle some Water (1 to 2 tsp) – if required and mix well; make sure the batter sticks to the corn nicely.
- In a Pan, heat Oil and deep fry the corns and keep it aside.
- In another Pan, heat Oil (1 Tbsp) and sauté Ginger (1 tsp). Add Onions (1 small) and Chilies (1 tsp)
- Add Fried Corn to the pan and toss well.
- Add Seasonings – Roasted Cumin Powder (¼ tsp), Chaat Masala (¼ tsp), Red Chilli Powder (¼ tsp)
- Sprinkle Lemon Juice (1 tsp) and garnish with Green Onion (1/4 cup). Serve hot
